Fit Beetroot Brownies

Who loves beets in cakes as I do, will definitely love this moist and fudgy chocolate brownie that doesn’t just taste great but is on the healthier side of sweet treats as well. With this recipe, I am not aiming to imitate the taste of pure-chocolate brownies and hide the taste of beets to snack healthier but without a significant difference in the flavor. You will taste the beets. Or perhaps, you’ll taste that there is something else besides chocolate – what makes this cake a wonderfully flavorful treat.

Beets make these brownies amazingly moist, providing a chewy texture and soft crumb even on the second day. A combination of beets and chocolate will provide a delightful sweetness that you’ll perhaps intensify with just a little bit of added sugar. Coconut or dark brown sugar are my favorites here because of its outstanding quality to preserve moistness and enhance caramel-like flavors. The cake is very easy to make, so let’s start.

INGREDIENTS
(square pan size 30×20 or 20x20cm)

500g Red Beets, cooked

100g Butter, unsalted

200g Dark Chocolate 

2 Eggs, whole

100g Brown or Coconut Sugar

70g AP Flour

30g Coconut Flour

30g Cacao Powder 

1 Teaspoon Vanilla Extract

1/2 Teaspoon of Cinnamon

Pinch of Salt 


METHOD

  1. Blend cooked beets with melted butter and melted chocolate until well combined and properly pureed (make sure there are no chunks of beets inside)
  2. In a separate bowl, whisk 2 whole eggs with sugar and pure vanilla extract until fluffy and pale in color (some 5 minutes)
  3. Combine beets-butter-chocolate puree with eggs&sugar mixture and mix until properly incorporated
  4. Add flour, coconut flour, cacao powder, cinnamon and pinch of salt
  5. Pour your batter on a baking pan lined with parchment paper and bake for some 20-25 minutes on 180°C or 350°F. The brownie should stay moist, do not overbake
  6. After brownie cooled down, you can top it with fresh raspberries or pour with melted chocolate combined with heavy cream or spread on some sour cream mixed with honey and cinnamon or just eat it as it is. Any of those tastes delicious. If you’re eating brownies on next day, make sure to heat them up for a minute or two in a microwave or oven
